What is Ceylon Black Tea?
Ceylon tea is merely the name given to the tea grown in Sri Lanka. The country has a vast variety of tea ranging from green tea, white tea, and black tea which is undoubtedly the most popular. What makes each tea different is how long they are exposed during the oxidation and withering process. For instance, black tea is oxidised for much longer till 50% of its moisture is removed.
The Origin of Ceylon Black Tea
Even though Sri Lanka has a long history with tea and it’s such an integral part to the country’s identity, interestingly, tea is not indigenous to Sri Lanka. Ceylon was the name given to the island by the British, who introduced the plant and started the tea industry in Sri Lanka. Today the acres of tea plantations have withstood the test of time and is now a faint reminder of a bygone era.
Types of Ceylon Black Tea
The altitudes on which the tea is grown has a significant impact on the colour and flavour of the tea. High grown tea has a honey-brown hue to it and a subtle flavour, often thought to be the best tea. Low grown tea has a deeper brown shade and a stronger full-bodied flavour. Many tea blends have combined the two to get a truly unique flavour.
Manufacturing Process of Ceylon Black Tea
The manufacturing process of Ceylon black tea is very intricate. After the bud and the two surrounding tender leaves have been carefully handpicked, they are brought to the factory to begin the manufacturing process. The first step is withering, here the leaves are dried till about half of its moisture is reduced. The dried leaves are then put into tea rollers which gently release the remaining moisture in the leaves to begin the fermentation process. After that the leaves are oxidised- it is at this stage that the tea gets its aroma and colour- and after that they are dried once more. The final stage of the process is tasting and assessing to ensure the highest quality of tea, before it is finally packaged.
